    WINEMAKING: Fermentation with submerged cap and small open stainlesssteel fermenters

    OAK MATURATION: 100% barrelmatured for 15 months, with 35% new fine grain French oak hogsheads (300 litres) and the balance in 2, 3 and 4 year old hogsheads

    TECHNICAL NOTES: Alcohol 14.5% pH 3.51 TA 6.30 g/l

    TASTING:

    Colour: Deep purplered.

    Nose: Lifted notes of violets, dark berries and plum, enhanced by cocoa powder and savoury, spicy Frenchoak.
